- 3/4 cup lager beer (pale, such as Stella Artois or your favorite ale)
- 32 oz. beef stock (divided, low sodium preferred)
- 2 Tbsp. Dijon mustard
- 5 fresh thyme (springs of soft, chopped)
- fresh ground black pepper
- salt (to taste, if needed)
- 1 Tbsp. cornstarch
- 12 slices baguette
- olive oil (for brushing)
- 6 oz. gruyère cheese (1 slice for each piece of bread, the rest shredded and spread over the top of the bowl)
- 4 Tbsp. chopped parsley (fresh, for garnish, optional)
- fresh ground black pepper (Additional, if desired)
