Great recipe. Used the entire can of both beans, chicken instead of beef, and corn tortillas instead of flour. Heated the corn tortillas for 5 min. as the oven was heating up in tin foil to increase flexibility for stuffing. Added cheese the last 10 min. so that the cheese didn't lose it's oil and become hard. Both methods worked to my advantage. Had extra filling left over, I anticipate on making another small pan to freeze for later. No complaints! Started at 4:30, completed with cooking at 6:40. Filled extra pan 8x10 with 8 more!

Used beef instead of sausage. It was really good. I used oil to grease pan instead of spray, and the enchiladas stuck to the pan more than what I would have liked. I would cook enchiladas without cheese on top for most of the cook time, then add cheese on top for the last 10 minutes.

Very good! I did ground beef instead because my boyfriend doesn’t like sausage but they were great!

A winner with our family! I altered it a little- I only used half an onion. Also, I didn’t pour the rest of the enchilada sauce over the top. After pouring some in the bottom of the dish and rolling the enchiladas, they seemed pretty saucy already. With those tweaks, it was perfect for us!
