Easy and good you. You can use whatever you have laying around that you’d make tacos with. Enchilada sauce and cilantro is nice finisher. Will make again.

Yuuuummy! my partner loved this dinner.
I used Gordon Ramsay's coffee-chili steak rub to season the chicken while cooking. With the enchilada sauce I used (green), there was a little too much juice left in the cups after cooking. If I were to make again, I would try to strain that out.

These were awesome and a definite make again. The tortillas were a little hard to maneuver but that was probably just my folding skills. Instead of the ground beef or chicken that it recommended, I used ground chorizo and it was crazy good.

It turned out great! I did some chicken and some chorizo. I did cook my own chicken. I seasoned the chicken with salt, pepper, cayenne, and steak seasoning, and boiled it. I also sautéed green pepper, tomato, and red onion and added that to the mix.

Wow! Yum. It was very bland with the original recipe so I decided to add rotels, red and green enchilada sauce, lime, cilantro, salt, pepper, garlic, crystal hot sauce and CHORIZO!

It sounded like such a great idea for a Friday night dinner. Unfortunately, it bombed. The filling was kind of bland, but fixable with a few shots of hot sauce. The tortillas on the other hand, were not. The were soggy on the bottom, and kept falling apart. I was hoping for something fun to eat out of hand, and ended up with a bland, soggy recipe.

These were so easy to make and turned out fantastic! We loved them! I will make them again! I chopped up some fresh tomato and jalapenos too add to the cilantro and green onion on top after baking! Add a dollop of sour cream and a margarita and you have pure perfection!

Apparently I added a little too much sauce because they were slightly runny. However they were delicious and we will definitely make them again

This was a huge hit in our house! We added cilantro, sour cream, and salsa on top after they came out of the oven. Adding these to the list of favorite dinners!

I actually made these for my nephew’s Mexican themed Rehearsal Dinner. They were really easy to make, delicious and presented beautifully on my Buffet. Once we stuffed them with the filling and warmed them through the texture of the crispy shell combined with the filling was quite nice.

It's always good to come up with new ways to present food to my kids. These could be good for breakfast too.
