- 3 oz. salt (no-added, dry-packed sun-dried tomatoes)
- 3 cloves garlic (minced)
- 2 Tbsp. chili powder
- 1 Tbsp. smoked paprika
- 2 tsp. ground cumin
- 1 tsp. dried oregano
- 1 tsp. sea salt (or to taste)
- 1/2 tsp. ground coriander
- 56 oz. whole peeled tomatoes (unsalted, in juice)
- 30 oz. kidney beans (drained and rinsed)
- 15 oz. black beans (drained and rinsed)
- 1 cup water (filtered)
- 2 Tbsp. balsamic vinegar
- 1 1/2 Tbsp. reduced sodium tamari
- 1 Tbsp. pure maple syrup (or coconut sugar)
