  • 1 cup self-rising flour
  • 1 cup flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup currants
  • 1/4 cup sugar
  • 1 1/4 cups buttermilk
  • 1 cup powdered sugar (sifted)
  • food color (Pink)
  • 1/3 cup flaked coconut

    Directions

    1. Preheat the oven to 400°C. Lightly grease and line a baking pan with parchment paper.
    2. Sift flours, soda and salt into a large bowl. Stir in currants and sugar. Make a well in the center. Pour in buttermilk and mix quickly to a soft, sticky dough.
    3. Turn dough onto a lightly floured surface. Knead gently into a smooth, round ball. Place on prepared pan.
    4. Bake 25-30 mins, until bun sounds hollow when tapped. If browning too quickly, cover with foil. Cool in pan 5 mins. Remove from pan; completely on wire rack.
    5. For the icing, combine powdered sugar and 1 tbsp hot water. Add a few drops of food color, mixing well. Drizzle over bun. Sprinkle with coconut.
