- 1 lb. ground chicken (lean, ground turkey meat, You can substitute the same amount in lean, or beef)
- 12 oz. diced tomatoes (WITH liquid)
- 1 yellow onion (or medium red, chopped)
- 15.5 oz. red kidney beans (dark, drained)
- 43.75 grams chili seasoning mix (ounce packet, I use McCormick, mild, 30% less sodium but you can substitute your favorite chili seasoning mix in the same amount)
- 16 oz. egg noodles
- pasta
- rice
- kosher salt (to taste)
- fresh ground black pepper (to taste)
- 1 Tbsp. curly parsley (or Italian, for topping per serving, optional)
- 1 plain Greek yogurt (dollop, or sour cream, for topping, optional)
- 3 Tbsp. cheddar cheese (or your favorite cheese, for topping, optional)
- yellow onion (or fresh chopped red, for topping, optional)
