- 1 chopped celery (scant cup, approx 2 stalks)
- 1 1/2 cups carrots (chopped, approx 2-3 carrots)
- 1 leek (small, halved and thinly sliced, or 1/3 cup chopped yellow onion)
- 3 Tbsp. all purpose flour
- 4 cups low sodium chicken broth
- 2/3 cup frozen peas
- 2 cups cooked chicken (chopped, I used a rotisserie chicken)
- 8.8 oz. uncle ben ('s Long Grain and Wild Ready Rice or sub a couple cups of cooked wild rice)
- 1 bay leaf
- 1 tsp. poultry seasoning
- 1/4 cup heavy cream (or more if desired)

My 12 year old daughter wants to learn to cook and this was here 1st recipe! She added 1/2 cup more broth and 1/4 cup more heavy cream and no water cause we like our soup thick. This was quick, easy and delicious!!
