- 1 cup chow mein noodles
- cilantro (optional, for garnishing)
- peanuts (optional, for garnishing)
- scallions (green part only, optional, to taste)
- 1/4 cup peanut butter
- 1/4 cup soy sauce
- 2 tsp. sesame oil (or vegetable oil)
- 1/4 cup sriracha (or less, to taste)
- 2 Tbsp. rice wine vinegar (substitute 1 tbsp white vinegar and 1 tbsp water)
- 2 Tbsp. water
- 1/4 tsp. garlic powder
- 1/4 tsp. fresh ginger (dried could be substituted, start with 1/8 tsp and add more if needed)
- 1/4 tsp. sesame seeds (optional)
