This was super yummy, the whole family liked it. The chicken was a little dry so next time I will maybe sear the chicken before putting it into the rice mix and/or use a lid, or maybe use boneless thighs. I didn't have peppers, but I put peas, corn, and mushrooms in with the rice. I seasoned the chicken with some pepper, seasoning salt and a little garlic powder.
