- 1 whole chicken (can substitute 3 boneless, skinless chicken breasts and 2 chicken thighs, roasted chicken, or whatever other chicken you may have)
- 10 cups chicken stock
- 5 carrots (unpeeled, halved and chopped into quarters)
- 1 yellow onion (large, diced)
- 3 stalks celery (diced)
- 5 potatoes (red or yukon, unpeeled, diced)
- 6 Tbsp. all purpose flour
- 1 cup milk
- 2 Tbsp. fresh parsley (chopped)
- 8 sprigs fresh thyme leaves (only)
- 1 1/2 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 2 cups cake flour (can substitute All-Purpose Flour, but will not be quite as fluffy)
- 2 tsp. baking powder
- 3/4 tsp. kosher salt
- 3/4 cup milk
- 2 Tbsp. unsalted butter (melted)
- 1 tsp. dried oregano
- 1 tsp. dried tarragon
- 4 sprigs fresh thyme leaves (only)

“Mmm it was a goodie” -Nick Took some time but very easy and ingredients were things I mostly had on hand, was able to use dried or canned for some things. Made a lot of soup, maybe could have made half as much. I may have used gluten free flour.

I found so many recipes for this dish using canned soup, which I don’t care for. I finally found this! It’s easy, quick and delicious. The dumplings were nice, light and fluffy. I’m keeping this recipe, for sure.

Chicken as flavorless, broth was soupy and dumplings tasted like flower. Would not use this recipe again!

Lots of flavor. I didn't add the tarragon since I didn't have it but the family loved it and we will be adding it to the dinner rotation!
