- 5 chicken breasts (cut butterfly so they are thin, ask your butcher to do it)
- 1 Tbsp. smoked paprika
- 1 Tbsp. ancho chile powder
- 1 Tbsp. ground cumin

- 1 1/2 lb. broccolini (large pieces cut in half lengthwise)
- 1/2 butternut squash (peeled, seeded, and cut into small bite size cubes)
- 3 zucchini (medium size green, cut in small bite size cubes)

- 1/4 cup pepitas (raw, or pumpkin seeds)
- 1 Tbsp. flax seeds
- 1/4 cup golden raisins
- 2 carrots (peeled and grated)
- 3 Tbsp. fresh herbs (like parsley, finely chopped)
- 1/2 lemon (juice of)
- 1/2 orange (juice of)
- 1 tsp. red wine vinegar (or apple cider vinegar)
- 1/2 tsp. Dijon mustard (or stone ground mustard)
- 2 Tbsp. honey
- 1/4 cup extra virgin olive oil
- 1/4 tsp. kosher salt
- pepper (Couple cracks of fresh)
