- 2 eggs (beaten)
- 1/2 cup flour
- 2 cups panko bread crumbs
- salt
- pepper
- extra light olive oil (or Canola oil to sauté)
- 6 Tbsp. unsalted butter (room temp)
- 1 large garlic clove (minced)
- 1 Tbsp. lemon juice (plus more to drizzle over finished chicken)
- 2 Tbsp. fresh parsley (chopped)
- 1/2 tsp. salt (we use sea salt)

It was delicious! Also, a lot easier than other recipes for chicken Kiev. I made one change. I cut the breast almost in two pieces but didn’t cut all the way through, so both halves of the breast were connected. I put the seasoned butter in the pockets I cut in both halves, then put one attached breast half on top. That meant I had to be sure only one side was sealed so the butter wouldn’t run out. Great recipe!

Great make sure the breasts aren’t thick or they will be hard to cook all the way through without burning the outside.
