- 4 leaves romaine lettuce (trimmed)
- 1/2 cup grape tomatoes (* chopped or sliced, see below)
- 1/4 seedless cucumber (english, sliced thin)
- 2 pita breads (fluffy)
- onion (diced or thinly sliced)
- bell pepper (diced or thinly sliced)
- sliced olives
- fresh parsley (to garnish, optional)
- crumbled feta cheese (extra, I'm guilty of this one! Yum!)
- 1/4 cup extra-virgin olive oil
- 3 Tbsp. plain greek yogurt
- 2 oz. feta cheese
- 2 Tbsp. red wine vinegar
- 1 Dijon mustard (TBPS)
- 1/2 tsp. dried parsley (or 1 tsp fresh)
- 1/2 tsp. garlic powder
- 1/4 tsp. dried oregano
- 1/4 tsp. dried basil
- 1/8 tsp. salt
- 1 Tbsp. water (if/as needed to thin the sauce)
- black pepper (to taste)
