This has been a favourite in my house for the last couple of years. The only thing I do different is add more sauce, and put chopped peppers and spring onions on top. Absolutely delicious!

My family loves it. I add more chicken and also add onions and potatoes. I dice and boil the potatoes first and precook the onions.

Turned out really good. But I would add pepper, onions, etc. to the mix to give it more flavor and spice it up a bit.

It was nasty. Honestly it needs more to enhance the flavor either corn or something else

Everyone loved it! From 3 years old to 60 years old. I did use green enchilada sauce since the 3 year old isn’t big on spicy.

For some reason, it turned out quite dry even though I used more sauce and cheese than indicated on the recipe.

Wonderful! I sautéd garlic, onions, salt then added a 28oz can of enchilada sauce and added the chicken to boil. Used a 9x9 pan, the ingredient measurement worked perfectly. Added green onions and served with sour cream. The taste is great and it got positive feedback from the picky boyfriend! Thank you!

This was very easy to make, and it was a big hit, at a party. If strapped for time, shredded rotisserie chicken also works well.

Added some extra seasoning - garlic powder, onion powder, chili powder, etc., and slow cooked the meat with sauce in the instant pot. My 3-yr old loved helping me make the layers. Will add to the rotation!
