This was delicious. Our picky kids ate it as well. Only wish is for layering it needs more filling. Yum!

Super easy. I slow cook the ckn the day before. Top with sour cream & olives, kids love them

I put the raw chicken in my slow cooker with half a cup of the enchilada sauce and cook on low for 8 hours while I am at work then I follow the recipe. With the chicken already cooked, this takes minutes to put together. My family really loves it and the leftovers are great for lunches the next day

Simple recipe. This one is a favorite. I made 1/2 the amount using a loaf pan..good amount for me and hubby. Bad news is no leftovers haha!

This was easy to make and tasty. I also added the cream of chicken celantro and added toco seasoning to the chicken. turned out great.

I added a can cream of chicken soup, cilantro and lime rice, and taco seasoning to the shredded chicken and it came out so tasty.

Pretty good added cream of chicken soup and black beans to the chicken, and some southwest seasoning used green enchilada sauce

Delicious! I used sharp cheddar and a Mexican crumbled cheese instead of Monterrey. For the sauce I used Las Palmas enchilada sauce and frozen hatch red Chile added some cumin, chicken bouillon and fresh garlic.

The recipe is amazing but I would add another pound of chicken to even it out, especially if you have a family

Great base for an enchilada casserole! I added a layer of black beans on top of the chicken and topped half the casserole with chopped tomatoes, pickled jalapenos, and black olives; sour cream on the side. Left the other side plain for the kids ;) Also, I made earlier in the day and refrigerated; come dinner time, just popped in the oven and served up with some Mexican Rice. Super!

Yummy! Pretty easy. I made the chix in the instapot with enchilada sauce, onions and peppers. Then it was easy to layer up and bake! Definitely will be making again!

So easy and so good! Slight modification -- added more than 3 cups of cheese and used Pepper Jack because I had a block of it on hand -- gave it an extra kick.

I think it would have been better if corn tortillas were available at the time I made this. I ended up using a pie crust and it was kinda sweet but still tasty. I was eating it with lettuce and tomatoes to break up the starchiness of it which was great. Also, shredding the chicken was super labor intensive (I used chicken thighs instead of breasts since I like dark meat and chicken thighs cook faster). I think in the end it was worth the labor of love.

It turned out great, I added some tomatoes and green chilies and sour cream, and then used both pepper jack and cheddar cheese. Little chili powder and cilantro on the top and cooked it up! I’ll be cooking it again!

Meal turned out great the second time I tried. I used the wrong tortillas last time. So definitely something I will cook again.

My family and I love it! It’s so easy to make and we make for plenty of leftovers. I just like to add Green Onions and Tomatoes.

Good recipe base.
I changed it since -isolation- and I’m using leftovers / what we have on hand.
Replacements:
Tortilla > cabbage leaves (about 4 green)
Rotisserie chicken > previously cooked salsa chicken
Additions:
Baked potato
Two bell peppers
Cheddar cheese
What I would add if I had it:
Black olives
Black beans
Can of green chili’s
Can of corn

This has been a favourite in my house for the last couple of years. The only thing I do different is add more sauce, and put chopped peppers and spring onions on top. Absolutely delicious!
