- 1 red bell pepper (roughly chopped)
- 1 yellow onion (medium, roughly chopped)
- 3 cloves garlic (smashed and peeled)
- 7 cups water
- 1 Tbsp. salt
- 2 Tbsp. sugar (plus more if necessary)
- 1/2 cup heavy cream
- thyme sprigs (Fresh, for garnish, optional)

Easy to make but totally bland. Needed lots of seasonings. Won’t make again

Delicious! Didn’t have an immersion blender so I used my hand mixer. Made for a little bit of a chunky soup, but a fine mesh sieve took care of that!

This was so good I added rosemary and basil to it turned out amazing. Will be keeping this recipes next time instead of water I’ll be using vegetable stock!

Wonderful!!! We added a pinch more of salt but otherwise it was perfect. I froze it for in freezer bags for consumption later.

Best butternut squash soup I have ever made! I had butternut squash soup served at my wedding and this was by far better than that venue's soup recipe! I added 1 tsp extra of sugar and it made it just right! I microwaved the butternut squash for 4 mins, to make it easier to peel and cut safely into cubes.
