- 1 lb. Brussels sprouts (small, if you can't find the teeny ones use the large ones but halve them for quicker cooking)
- 1 medium red onion (finely diced)
- 1 Tbsp. coconut oil
- 1 tsp. black mustard seeds
- 2 Tbsp. coriander leaves (minced)
- 4 cloves garlic (smashed with a knife or in a mortar and pestle until they are almost a paste)
- 1 leaf curry (optional)
- 12 leaves (optional)
- 2 medium tomatoes (diced)
- 1/2 tsp. turmeric
- 1/2 tsp. cayenne (or any red pepper powder)
- 2 tsp. Garam Masala (can sub with curry powder or even sambar powder-- they will all result in flavor differences but will all be delicious versions of each other)
- 1/2 cup raw cashews
- 14 oz. coconut milk
- 1 Tbsp. coconut oil
- salt (to taste)
- 1 lemon (or lime)

made this did tweak it a little and used double cream but oh so nice, couldn’t stop eating the sauce it’s a winner 👍

a decent amount of flavor but the brussel sprouts keep the curry from getting a richer flavor by cooking an hour or more

This is a fantastic dairy-free sauce that could be used with a lot of different things. We made the recipe as-is, but added gluten free smoked sausage for a little extra protein. I'm going to try it again with chicken because it seems like the flavors would go well together.
