- salt
- pepper
- 3 Tbsp. olive oil
- 4 potatoes (medium to large size, cut into 2 inch pieces)
- 3 carrots (peeled and cut into 1 inch pieces, or about 20 baby carrots)
- 2 stalks celery (sliced)
- 1 yellow onion (sliced)
- 1 envelope onion soup mix
- 1 envelope brown gravy mix (or use homemade gravy mix - recipe at end of post)
- 2 cups applesauce (I used unsweetened)
- 1 cup water
