- 1 Tbsp. extra virgin olive oil
- 2 Tbsp. chives (chopped)
- 1 cup potato (diced)
- 2 cups vegetables (chopped, I used zucchini and carrots, but you can use whatever is seasonal in your area)
- 2 tsp. thyme
- 1 lemon
