- 16 oz. lentils (bag of, I used red lentils, but any will work. Green lentils cook more al dente)
- 2 tsp. olive oil
- 2/3 cup diced onion (red or white)
- 1 tsp. minced garlic
- barbecue rub
- bbq rub
- 3 tsp. salt
- 1 Tbsp. molasses
- 1 tsp. smoked paprika
- 1/2 tsp. ground mustard
- 1/2 cup bell peppers (diced, extra for topping)
- 2/3 cup diced tomatoes (or canned tomatoes, drained)
- 4 Tbsp. bbq sauce (spicy, mixed in, optional)
- sea salt (/black pepper to taste)
- tempeh
