- 1/4 tsp. salt
- 2 tsp. canela
- 3 eggs
- 3/4 cup buttermilk
- 3/4 cup coconut oil (melted)
- 1 1/2 cups sugar
- 2 tsp. vanilla extract
- 2 cups shredded carrots
- 1 cup shredded coconut (I buy unsweetened because the icing is already very sweet)
- 1 cup toasted walnuts (chopped &)
- 8 oz. crushed pineapple with juice (1 can)
- 1 cup raisins (soaked in rum or bourbon for an extra kick, you can also use orange juice)
- 1 cup unsalted butter (2 sticks, softened)
- 8 oz. cream cheese
- 2 1/2 tsp. vanilla extract
- 4 1/2 cups powdered sugar (4 -)
- licorice (whiskers & lashes)
- jelly bean (eyes & nose, whatever color for eyes you like & pink for nose)
- marshmallows (for feet, face, and bunny cheeks)
- biscotti (ears)
- red food coloring (or pink sprinkles)
