I cut the recipe in half and it still turned out great! I was able to get 4 moderate portions when I prepared it. Using frozen veggies and the microwave to cook the potatoes saved a lot of time too.

Came out very good. The ground turkey can be a little stringy and my fiancé would have preferred mashed potatoes instead of the roasted but her friend was very happy with the roasted potatoes.

Turned out pretty good. Used beef instead of turkey. But I liked the ease of cooking the potatoes in the microwave.
