You can bake your salmon or grill it, but today, let us make a coconut sauce with tons of yellow curry powder to make it spicy; then we will add carrots and spinach to round up the deliciousness in this salmon meal. And then you can pair it with rice to make it an Asian meal…
Ingredients
- 1 lb. salmon (slice into cubes)
- 1 piece carrots (medium sized, cut into bite size pieces)
- 2 stems celery (cut into bite size pieces)
- 1 handful spinach
- 1 can coconut milk (or lesser)
- 1 onions (medium size, chopped)
- 1 Tbsp. canola oil
- 1 tsp. curry powder (yellow, or more, according to your preference)
- salt (to taste)
Directions
- Heat cooking oil then add in the onion and cook until transparent.
- Add in carrots and celery.
- Pour the 1 can coconut milk and let it simmer. If you do not like a lot of soup on this salmon curry, slowly add coconut milk and adjust accordingly.
- Then , Add in the salmon simmer until salmon is cook through. Add in salt and curry powder. Add the spinach and turn off heat. Serve while hot.
