  • 2 1/4 pounds potatoes (peeled, quartered)
  • 1/2 cup duck fat
  • 1 sprig rosemary leaves (fresh, removed)
  • sea salt (flaked, to serve)

    Directions

    1. Preheat oven to 425°F.
    2. Place potatoes in a large saucepan. Cover with cold water. Bring to a boil and cook for 12-15 mins, until just tender. Drain.
    3. Place duck fat in a baking dish. Heat in oven for 5-10 mins. Add potatoes and toss to coat. Roast for 30 mins. Turn over, sprinkle with rosemary and roast for another 20-25 mins, until golden and crisp. Season with flaked sea salt.
