Brilliant comfort food for Winter! Followed this recipe precisely the first time - but I also cooked it for 4 hrs as suggested, this resulted in a beautiful thick sauce, great flavours and textures. To the 2 cups of beef stock I added 2x TBSP of Worcestershire Sauce to bolster the broth a bit more and when combined with a 750ml bottle of Guinness, it resulted in a divine flavoursome sauce! I also added a few carrots after the initial 2 hours and a few celery stalks at the three hour mark which resulted in 'pillowy potato' and savoury veggies that aren't mushy. I’d made enough to reheat leftovers the following day – again on a low heat but cooked on the stovetop this time. The whole dish had matured to another depth of flavour beautifully! This is a keeper recipe! Cheers Cassie…
