- 2 cups chicken stock
- 1 cup coconut milk
- 1 cup coconut cream
- pinches salt
- 1 tsp. palm sugar
- 2 stalks lemongrass (trimmed to bottom 3-4 inches and bruised)
- 3 shallots (peeled and bruised)
- 2 cilantro roots (scraped clean and bruised)
- 3 Bird's eye chilies (I used whatever hot peppers I had in the fridge)
- 10 slices galangal
- 3 kaffir lime leaves (center stem ripped out)
- 3 oz. mushrooms (Thompson suggests torn chanterelles, straw or oyster, none of which we have, so I quartered crimini mushrooms; bunapi and beech mushrooms both work well also)
- 3 oz. chicken (skinless, sliced, I used shredded roasted chicken)
- 3 Tbsp. fish sauce
- 1 Tbsp. lime juice (I probably doubled)
- hot peppers (extra bruised, to taste)
- 1 Tbsp. Cilantro leaves (chopped)
