- 1 cup onion (small diced)
- 1 jalapeño (seeded and diced, optional)
- 3 garlic cloves (minced)
- 15.5 oz. pinto beans (can of, drained and rinsed)
- 14.5 oz. diced tomatoes (1 can)
- 1 Tbsp. maple syrup
- 1 Tbsp. tomato paste
- 2 tsp. chili powder
- 1 tsp. cumin
- 3/4 tsp. salt
- 12 oz. Mexican beer (1 can, or bottle of, or 1½ cups of low-sodium vegetable broth)
- 5.5 oz. vegan bacon (1 package, cut into bite-sized pieces, I used Sweet Earth Hickory & Sage Benevolent Bacon)
- 1/4 cup cilantro (chopped)
- 1/2 lime (Juice of)
- 1 1/2 cups water
- 1 cup unsweetened almond milk (plain)
- 3/4 cup corn grits (polenta, I used Bob’s Red Mill)
- 2 Tbsp. vegan butter
- 1/8 tsp. salt

i liked this so much! the polenta makes a lovely base and the beans are sweet given the maple syrup. its become a 'take to work for lunch' favorite
