  • 3 tablespoons peanut oil
  • 3 garlic cloves (minced)
  • 1 shallot (minced)
  • 2 eggs (whisked)
  • 12 medium shrimp (shelled and deveined, tails on)
  • 1 cup tofu (chopped, I used fried, but well-drained raw tofu will also work)
  • 12 ounces rice flake noodles (soaked in lukewarm water for 10 minutes and drained)
  • 1 red bell pepper (diced)
  • 1 cup basil leaves (packed)
