- 1 yellow onion (large, peeled and diced small, 2 cups)
- 1 red bell pepper (large, diced small, 1 cup)
- 1/2 lb. potatoes (scrubbed and diced small)
- 1 poblano pepper (small, seeded, deveined and diced small)
- 4 sprigs fresh thyme
- 1 1/2 tsp. kosher salt (plus more to taste)
- 1/8 tsp. freshly ground black pepper
- 5 cloves garlic (peeled and minced, 1½ tablespoons)
- 1 1/2 tsp. ground cumin
- 1 tsp. Hungarian paprika
- 1 tsp. turmeric
- 1 tsp. ground coriander
- 1/4 tsp. chipotle powder (ground)
- 14.5 oz. fire roasted diced tomatoes (undrained)
- 14 oz. extra firm tofu (organic, patted dry and crumbled)
- 1 1/4 cups corn tortilla chips (broken organic)
- 1 lime (halved)
- 2 Haas avocados (pitted and thinly sliced)
- 1/2 cup cilantro leaves (picked fresh)
- 1 btl. hot sauce (your favorite)
- 1 jar salsa (or batch of your favorite, optional, try my tomatillo tomato salsa)
