- 110 grams almond meal (dried in a cool, 100 degrees C oven for 10 minutes and sifted)
- 200 grams icing sugar
- 1/2 tsp. canela
- 25 grams brown sugar (dried in a cool, 100 degrees C oven for 5 minutes and sifted)
- 25 grams caster sugar
- 100 grams egg whites (frozen+defrosted to room temp or aged for 48 hours, you can use fresh eggs too, just make sure they are room temperature. I always use fresh these days, and zap it in the microwave on defrost for 10 seconds)
- 1 tsp. egg white powder (optional)
- canela (Extra, or sprinkles for topping)
- 100 grams unsalted butter
- 120 grams icing sugar (sifted)
- 2 1/2 Tbsp. strawberry jam
