- 1 1/2 tsp. unflavored gelatin
- 3 tsp. cold water
- 2 cups whole milk

- 1/4 tsp. salt
- 6 large egg yolks
- 4 Tbsp. cornstarch
- 2 tsp. pure vanilla extract
- 3/4 cup whipping cream
- 1 cup salted caramel sauce
- 2 cups whole milk (at room temperature, between 75 and 85 degrees)
- 1/2 cup granulated sugar
- 3 1/2 tsp. active dry yeast
- 1 large egg (+ 1 large egg yolk, slightly beaten)
- 6 Tbsp. butter (melted and cooled to room temperature)
- 1 Tbsp. pure vanilla extract
- 1 tsp. grated lemon zest (finely)
- 1/2 tsp. ground nutmeg
- 6 cups all purpose flour (unbleached)
