I had a neighbor who gave me a bunch of zucchihi so I returned the favor & made her a batch of these muffins. I used powdered sugar instead of granulated & swaped in tahini for half of the vegetable oil to give these a richer flavor. I bake muffins & quick breads all the time & I have to say these turned out drier than most recipes. They are still good but definitely taste better when warmed up a bit.
I don't eat sugar or white flour but will use this recipe again to make another batch for a neighbor or coworker in the future, should I have any leftover zucchini.

Sooo rich!! If I ever make this again, I’ll serve them with vanilla ice cream to cut the sweetness.

This recipe made about a dozen regular size muffins and another dozen minis.
Not my favorite TBH. The cinnamon doesn't do it any favors. Its edible though.

Made these today for childrens school snacks, they turned out beautiful and moist. Only thing i would say is the cocoa flavour is quite strong so a little on the bitter chocolatey side (i did use raw sugar, which is not quite as sweet as white but) 🙂

Super yummy and easy to make! I used mini chocolate chips and they incorporated really well. Great recipe!
