- 1 kg pork belly (skin on, I cooked 1.8kg which serves 15 persons)
- 2 Tbsp. salt
- 100 grams spring onions (+ additional spring onions to put in the mantou)
- 50 grams ginger (weighed with skin on)
- 500 grams Shao xing wine
- 120 grams light soy sauce (premium)
- 80 grams dark soy sauce (premium, if you prefer darker you can add another 20gm)
- 70 grams rock sugar
- water (Some)
- corn flour (Some)
- tea leaves (Some Chinese, and soak them in water, optional)
- lettuce
- 2 cinnamon sticks
- 3 star anise
- 5 cloves garlic
