- 6 oz. burdock (root, "gobo")
- 300 mL dashi stock
- 2 Tbsp. sake
- 2 Tbsp. soy sauce (light-color, “usukuchi shoyu”)
- 1 tsp. mirin
- 1 tsp. sesame oil
- 1/2 tsp. salt
- 1 tofu (rectangular piece fried, pouch, "abura-age", blanched and thinly-sliced)
- 1/4 lb. Japanese turnip ("kabu" leaves with stems, chopped, *you can also try with different green vegetable such as daikon leaves or dandelion leaves)
- 1/2 Tbsp. sesame (oila pinch of saltsome toasted white sesame seeds)
