- 1 1/2 Tbsp. usukuchi shoyu (light soy sauce or regular soy sauce)
- 1/2 Tbsp. fish sauce
- 1 1/2 cups short grain rice (this is the best one, rinsed and drained)
- 1 1/4 cups dashi stock (chicken stock, or vegetable stock)
- 1 tsp. toasted sesame oil
- 1 oz. ginger (1-inch piece peeled, sliced into needle-thin strips)
- 1 scallion (thinly sliced)
- 2 Tbsp. white sesame seeds (toasted)
