6 SERVINGS
- 1 lb. ground meat (This can be beef, chicken, turkey, pork, emu, camel…get what I’m saying any meat. If you like the meat you’ll like the end product. Use what you have on hand.)
- 16 oz. beans (Any beans. Black, Northern, Pinto. Or if you make your own beans 1 pound of cooked beans. You could even use a can of refried beans.)
- 16 oz. salsa (Any salsa will do use what you have. 16 ounces = 2 cups)
- 1 cup shredded cheese (What ever you have. I have used sharp cheddar, Monterey Jack, Colby, Colby Jack, plain old cheddar, white cheddar….)
- 1 cup yellow corn meal
- 3 cups water

I needed to use up leftovers and wanted to impress my husband who said his mom made the best tamale pie. I accomplished both with this recipe. I used leftover italian beef (from another recipe) along with added onions and black olives and the salsa. followed the rest of the recipe as written. this was best tamale pie I ever had. my husband loved it.
