Description
Roasted broccoli is a wonder. A hot oven can transform the mild vegetable into something rich and caramelized, and the depth of flavor it's capable of never ceases to amaze me. And tossing with hot pasta is about the best way I know to transform that magic into a full meal. This recipe, from Diane Rossen Worthington's Seriously Simple Parties, takes things a step further by tossing the whole thing with a pistachio gremolata.

- 1/4 cup shelled raw pistachios
- 1 lemon
- 2 cloves garlic (minced)
- 3 Tbsp. finely chopped parsley
- 1 1/2 lb. broccoli (stems removed, about 1 pound 2-inch florets)
- 3 Tbsp. olive oil
- salt
- pepper
- 1/2 lemon
- 1 lb. penne

I didn’t have pistachios so I made the dish with pine nuts. I thought it was pretty good but my kids and husband didn’t.

Good dish. the combined tangy and smokey touch from the lemon and pistachios are key in giving the broccoli a unique and balanced flavour.

Love the flavour of this dish and so did my friend. The only thing is it is mm ore time consuming than ibusually prefer, having to chop up the pistachios.

I really love this dish! It’s really good. I’m not a fan of pistachios so I didn’t add any but the dish turned out great and in my opinion it was easy to make! I would definitely make this again.

Well I burned my pistachios and undercooked my broccoli but it tasted good I’m sure it’s better if not botched like I did.

So fresh and delicious. Great tasting summery dish. Only changes I made was to use cashew nuts instead of pistachio and I used the juice from the lemon (as well as the zest).
