I've made this recipe twice now. Neither time did I include shallots. The first time I used tarragon and it was fantastic. This second time I didn't have fresh tarragon and substituted some homemade tarragon salt for the salt and tarragon from the recipe. Still tasty but I believe that the fresh tarragon was better.
