Excellent and easy to make! I threw in some vegetarian chicken chunks for protein and a little red lentil pasta. So good!

So absolutely delicious. It’s actually kind of cheating. Nothing this good for you is supposed to be this yummy… but it is. Even my meat loving bf agreed this is his new favorite soup! He keeps requesting it for dinner. This may have been his first time eating Kale but he didn’t even bat an eye ;) #VeganForTheWin

loved this soup! I used chard from my garden vs. the kale and cooked the stems with the onion, celery and carrots. I didnt have a big enough can of diced tomatoes so i used a small can of plain diced tomatoes and another with green chillies - this added just a hint of spicy! I also seasoned with salt & pepper at each step.

This was pretty good! I added in some beans and used chicken broth instead of vegetable stock. Lots of flavor. I'll probably make it again.

Delicious. I replaced half the veg stock with homemade chicken stock, used fresh tomatoes instead of canned, and used baby kale for a smoother taste. This will be in my regular soup rotation effective immediately!

delicious! i didn't have any kale so i used spinach and i added acorn squash to it. this will he added to my regularrotation for the fall and winter

It is one of our favorites! I make it all the time. I normally make it the day before and double the recipe - its tastier the next day and health!!

So delicious! We squeezed some fresh lemon juice on the top and sprinkled with enegivita too. We will be making again :)
