- 1/2 cabbage (chopped)
- 28 oz. chopped tomatoes (organic only, or 6 fresh chopped fresh tomatoes)
- 1/2 cup tomato paste (organic only, if you like a richer tomato flavor, I didn't)
- 1/2 bag lentils (dry uncooked, washed)
- 2 cups kidney beans (cooked, or 1organic can)
- 4 carrots (sliced)
- 1 red pepper (large, chopped)
- 1 pkg. sliced mushrooms (or any dried mushrooms)
- 1 onion (chopped)
- 4 cloves garlic (pressed)
- cracked pepper (fresh, to taste, I also added 21 Salute salt free seasoning from Trader Joes)
- 20 cups water (filtered, depending on the size of your pot)
- 3 sprigs fresh basil
- 3 hot pepper (shakes of ground, optional)

I sauteed the onions, garlic, and peppers in the Instapot. Then added the rest and cooked it for 45 min. I used woodear mushrooms, 1 package of oyster mushrooms, 1 package of cremini, no carrots. I used 2 small shallots along with a smaller onion and a blend of red, brown, and green lentils. I threw in 4 sprigs of fresh thyme instead of basil.
