- 2 lb. ground turkey (or beef)
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. ground cumin
- 1/2 tsp. chili powder
- 1/2 cup enchilada sauce (can substitute tomato juice or salsa that you have on hand)
- 2 cups enchilada sauce (I use homemade sauce but you can use canned)
- 6 tortillas (I use all natural whole grain)
- 1 can vegetarian refried beans (or 1 1/2 c total)
- 1 1/2 cups shredded cheddar cheese (separated into thirds)
- 1/2 cup fresh cilantro (chopped and separated into thrids)
- 1/2 cup green onion (chopped and separated into thirds)
- 10 cherry tomatoes (chopped)
- 1/4 cup fresh cilantro (chopped)
- 2 cups vegetable (mix, corn, black beans, red peppers, onions)
