- 1 yellow onion (large, chopped into medium diced)
- 2 Tbsp. canola oil (or grapeseed)
- 8 oz. white mushrooms
- 2 cloves garlic (minced)
- 2 Tbsp. soy sauce
- 1/2 cup finely chopped pecans
- 1 cup farro (cooked, see notes)
- 1/2 cup dried cranberries
- ground black pepper (Freshly)
- 1/2 cup fresh herbs (mixed, minced very fine, for instance, 4 tablespoons parsley, 2 tablespoons sage and 2 tablespoons rosemary is a good combo.)
- oil (a little, for brushing)
- smoked paprika (for garnish, optional)
