- 240 grams prawns (about 6 large, heads and tails intact, whiskers and legs trimmed, digestive tracts removed, see note)
- coriander (about 2 tbsp, to serve)
- 180 grams glass noodles (dried, mung bean noodles)
- 4 1/2 spring onions (trimmed and cut into 4cm lengths)
- 4 1/2 garlic cloves (bruised)
- 15 grams ginger (unpeeled, thinly sliced)
- 2 coriander roots (small, with some stalk)
- 120 mL oyster sauce
- 60 mL lard (melted, ¼ cup)
- 60 mL wine (dark Chinese, see note, ¼ cup)
- 1 1/2 Tbsp. roasted sesame oil
- 3/4 tsp. white sugar
- 2 pinches white peppercorns (coarsely ground)
- 2 pinches black peppercorns (coarsely ground)
- 2 pinches coriander seeds (coarsely ground dry-roasted, see note)
- Sichuan peppercorns (Large pinch of ground dry-roasted, see note)
- 1 pinch Chinese five-spice
- 1 pinch ground star anise
- 1 pinch ground ginger
- galangal (Large pinch of ground, see note)
