- 3 cups heavy cream
- 1 cup whole milk
- 1/2 tsp. sea salt
- 2 tsp. espresso powder
- 6 oz. bittersweet chocolate (chopped)
- 2 oz. unsweetened chocolate (chopped)
- 8 egg yolks
- 6 Tbsp. sugar
- 1/2 tsp. sea salt
- whipped cream (optional)

Directions
- Set the Smart Oven+ Attachment base pan with heating element and Steamer Water Basin Pan on the oven rack. Add 4 cups of water to Water Basin Pan and set Perforated Steamer Tray in place. Cover with Lid.
- Select STEAM Mode on oven and preheat the Steamer for 10 minutes.
- Combine milk and heavy cream in large saucepan. Bring to a simmer over medium heat. Remove from heat and whisk in salt, espresso powder and both chocolates. Whisk until chocolate is melted.
