Spectacular. I 86’ed the vanilla to make this Whole30 compliant; I just added back in an extra teaspoon of water to make up for the lost moisture, and the flavor did not suffer. The moisture level was perfect, and these stuck together very well. I did not roll in coconut. The recipe mentioned that coconut might not stick well if the bites were not rolled right away, but based on my experience, the bites are pretty sticky. I should note that I chopped up the dates before measuring them out; probably overkill on my part because I used my food processor, but my food processor tends to bounce dates around rather than mince them too much.

Good. I used only almonds totaling 1 cup. They were a little dry so I added maybe 2 T. of almond butter. I might try honey instead next time just to make them a tiny bit sweeter or more dates.

These turned out delicious. I used raw cashews and raw walnuts, because I had no almonds, and I added 1/4 cup flax seeds.
Great for a healthier option for dessert!
