- 2 1/4 cups whole milk
- 1/3 cup heavy cream
- 3/4 cup sugar (divided)
- 1 cup unsweetened cocoa powder (This is seriously intense. Can easily be reduced to 1/2 cup for a creamier texture. Use good quality cocao powder. The original recipe recommends Pernigotti. I used Shiloh Farms Organic Cocoa Powder)
- 2 oz. bittersweet chocolate (finely chopped, Use 60% to 85% chocolate. I used half of a standard 3.5 ounce 85% chocolate bar plus 1 square)
- 4 large egg yolks (extra-)
- 2 Tbsp. coffee flavor liqueur
- 1 Tbsp. rum
- 2 tsp. pure vanilla extract
- 1 pinch kosher salt (I used Himalayan pink salt)
- 1/2 cup bing cherries (fresh, pitted and roughly chopped)
