- 1 onion (cut into 8 pieces)
- 1 tsp. rosemary
- 1 tsp. thyme
- 1/2 pt. water
- 1/4 pt. heavy whipping cream
- 1 Tbsp. blue cheese
- 1 Tbsp. redcurrant jelly (Bonne Maman)

- gravy browning (or the the danish kulør**)
