- 2 bunches dandelion greens (young, tough stems discarded, harvest before flowering or greens will be bitter)

- 3 Tbsp. extra-virgin olive oil
- 4 stalks green garlic (or 3 cloves garlic, finely chopped)
- 1/4 cup pecans (coarsely chopped, soaked and dehydrated ahead of time)
- 1 1/2 Tbsp. balsamic vinegar
- 1 tsp. sea salt
- 1/4 tsp. pepper
- 1 pkg. wine yeast (dried, where to find online)
- 1/4 cup warm water
- 2 qt. dandelion (petals)
- 4 qt. water
- 1 cup fresh orange juice
- 3 Tbsp. fresh lemon juice
- 3 Tbsp. fresh lime juice
- 8 whole cloves
- 1/2 tsp. powdered ginger
- 3 Tbsp. orange peel (coarsely chopped, pith removed)
- 1 Tbsp. lemon peel (coarsely chopped, pith removed)
- 6 cups panela (Rapadura, or whole cane sugar, where to find Rapadura online)
