- 1 cup quinoa
- 2 1/2 cups water (or unsalted vegetable stock)
- 1 ghee (tpsp, or coconut oil)
- 1 shallot (small, minced)
- 1 Tbsp. nutritional yeast (optional)
- 1/8 cup lemon juice (fresh squeezed)
- 1/8 tsp. maple syrup
- sea salt
- freshly ground black pepper
- 1 cup dandelion greens (fresh picked young, washed thoroughly)
- 1 cup spinach leaves (young)
- paprika
- sweet potatoes
- 900 grams sweet potatoes (I used 2 medium sized sweet potatoes, peeled and sliced into 5 mm-1 cm, ¼-½ inch thick rounds)
- 2 Tbsp. olive oil
- 1 tsp. sea salt (Celtic)
- 1 Tbsp. smoked paprika
- 2 tsp. maple syrup
