- 600 grams loin (or other firm white, skinless fish, cut into 2cm cubes)
- 1 liter vegetable oil (for deep-frying)

- 100 grams plain flour (plus extra for dusting)
- 1 tsp. sumac (or the finely grated zest of 1 lemon)
- 1 tsp. ground cumin
- 1/2 tsp. salt
- 1/2 tsp. bicarbonate of soda
- 1 bunch mint leaves (roughly chopped)
- 1 bunch flat-leaf parsley (roughly chopped)
- pepper sauce
- 230 grams roasted red peppers, drained
- 1 garlic clove (crushed)
- 50 grams walnuts
- 1/2 tsp. chilli powder
- 1 tsp. cumin powder
- 1 Tbsp. smoked paprika (or hot)
- 2 Tbsp. pomegranate molasses (or the juice of 1 lemon and 1 tsp honey)
