- 1/3 cup Ya cai (sui mi)
- 2 Tbsp. sesame paste (tahini)
- 3 Tbsp. soy sauce
- 2 tsp. sugar
- 1/4 tsp. five spice powder
- 1/2 tsp. Sichuan peppercorn (powder, we ground whole Sichuan peppercorns in a mortar and pestle)
- 1/2 cup chili oil (your prepared, scary, but yes!)
- 2 cloves garlic (very finely minced)
- 1/4 cup cooking water (from the noodles)
- 1 lb. noodles (fresh or dried white, medium thickness)
- 1 bunch leafy greens (spinach, bok choy, or choy sum)
